Master’s Student in Food Science and Technology Wins Silver Medal at the 4th International Youth Summit (IYS) 2025

The Faculty of Agro-Industry, Chiang Mai University, congratulates Ms. Sunita Jue-ming, a Master’s student in the Food Science and Technology Program, Food Innovation Design and Development Track, for winning the Silver Medal at the 4th International Youth Summit (IYS) 2025, organized by the Sentosa Foundation.
Her project, titled “Wolffia Protein Isolate: Sustainable Plant-Based Protein for Future Food Security,” was selected as a finalist for its innovative concept of sustainable food development. The research focuses on the development of plant-based protein from Wolffia globosa, a fast-growing aquatic plant that requires minimal water and no chemical inputs. This plant serves as an environmentally friendly and sustainable alternative protein source to replace animal protein.
The study also emphasizes green protein extraction technologies, such as ultrasonic-assisted and enzymatic extraction, to obtain high-quality proteins suitable for health food applications. The project aims to contribute to the circular economy and create new opportunities for rural Thai farmers.
The project was supervised by Assistant Professor Dr. Pavalee Chompoorat Tridtitanakiat.
